Peach Cobbler

Well peach season has officially come to an end here, but I couldn't go without picking up one more 1/2 peck. I wasn't too sure what I was going to do with this box of peaches (besides eating one with lunch everyday), but then I came across this amazing sounding cobbler recipe. After drooling over the pictures I decided to give it a go. I did alter it just a little bit as I like my cobblers to be not so sweet. 

14 peaches (you can either take the skin off or just leave it on)
1/4 cup brown sugar
2 Tbsp cornstarch
1 cup flour
1/8 cup white sugar
1/4 brown sugar
1 tsp baking powered
1/2 tsp salt
6 Tbsp butter  cut into pieces
1/4 cup boiling water

Preheat your oven to 425 degrees F. Cut your peaches in to nice sized chunks, then mix in the brown sugar and cornstatch. Make sure the peaches are well covered. Place your peach mixture into a lightly grease pan and cook for 10 minutes. 

While the peaches are cooking mix together your flour, brown and white sugars, salt, and baking powered. Add in the butter and mix with hands until the mixture looks similar to coarse meal. Add the boiling water until combined. 

After 10 minutes remove peaches from the oven and drop spoonful of toppings over them. Then sprinkle cinnamon over the whole thing and bake for about 30 minutes or until the top is a nice golden color. 
This bad boy is seriously melt-in-your-mouth delicious, and pretty darn simple to make too which is definitely a plus! Let me know if you try it out and what you think!

  6. Nice! I don't know if I'll be able to find peaches anymore, but if I do I'll for sure keep this in mind. All the awesome hybrid fruits are in season at the farmers market now so I'm mostly eating things like Apriums, Pluots, and Nectarplums. Ah cross-pollination, you make such delicious treats!

  7. I'm going to have to try this -- my husband is a peach fanatic & I've never been able to step up from the "roll peaches in crescent rolls and pour sprite on them then bake" recipe. I need to try this one!
