2nd Annual Birthday Adventure Time

Last year we started this wonderful tradition for Will's birthday, along with our friend Shaye we go out and get some yummy mexican food at La Tolteca and then go and see a scary movie. Last year we went and saw Paranormal Activity 2 and then this year they came out with Paranormal Activity 3 so we had to go see it.  It was pretty scary fun.
At the restaurant they do a song and a little dance, put a hat on your head (new this year) and then give you some wonderfully yummy fried ice cream.  
We all had to take turns wearing the hat for pictures.
I think we all looked super dashing, too bad we weren't allowed to keep it, oh well.

Good times were had by all, that is for sure!

Warm Yummies

One of my absolute favorite things about the fall is that it gets chilly enough in our work room for me to go get some yummy Abuelita, and sip on it while editing videos.  It's probably a good thing it's not cold all year long because then I would be drinking even more than I drink now, hehe!

New York, New York

On Tuesday Will and I headed up to Manhattan for a job; one of my favorite things about doing freelance work, you never know when you are going to get to go.  We got put up in a hotel in midtown which worked out pretty wonderful because it was two blocks away from where the job was.  I only wish we had a more than one night up there, but even with only one night we made sure to pack in as much as we possibly could! 
We spent a couple of hours walking around Broadway, all the while shooting footage for our new video that should be up in the next couple of days. Then met up with some friends and went out to dinner at one of the yummiest vegan/vegetarian restaurants I have ever been to, the Red Bamboo.  If you ever happen to be in New York I highly recommend it, it's so wonderfully delicious, and totally reasonably priced (which makes this kid super happy!)

After our wonderfully fun evening and late evening we got up early the next morning to get ready for the shoot.  We made our way over to the location hauling all of our stuff because we had to check out of the hotel, which I think looked pretty silly.  After making it to the shoot and got everything we needed, and they had a pretty darm amazing lunch waiting for us (an added bonus!).  We finished up around 3 packed up and picked up the car and headed back home, a 4 hour drive, which we were not looking forward too.  But we made it home safe and sound a little after 7PM and warmed up some lasagna I had made the other day then crawled into bed.  I don't think our bed has even felt so absolutely wonderful hehe.
And an extremely frumpy daily style haha, but after 4.5 hours in the car I just wanted to get out and walk around and didn't care to much what I looked like.

I completely forgot to post this in my post about Will's birthday so I thought I would share it now. I make these super goofy pictures loosely based on our real life, and call them the WA Adventures (Will and Amanda Adventures, hehe!) But this was his birthday one, and I put as his computer desktop while he slept so he had a nice little surprise in the morning. Hehe I know it is super goofy but I enjoy making them, I just wish I got to make them more often, lack of time or ideas can be quite a hindrance.

New Layout!

Will and I spent the better half of today redesigning my blog and I am absolutely in love with it! I've been wanting to change it up for awhile but didn't have a clue were to start, that is where my wonderful sir stepped in to lend a hand.  
Not only did we do all this (and when I say we I mean Will really hehe) but all along the way Will taught me a whole bunch of things about html so hopefully I will be able to do a lot more, if not all of it, the next time I get an itch to change my layout! 

What do you all think? A big improvement right!

Sir had a Birthday!

Thursday was Will's birthday (he is 27!), we took the day off and got out of the house.  We had talked about what to do for his birthday adventures and decided to go on a bike ride down to the beach and drink some yummy abuelita (the most delicious mexican hot chocolate mix you can by in a store) while watch the waves crash into the beach.  But before we went I had a little surprise adventure for Will.

We hoped in my car and I programed the GPS and prayed that he would take us to the right place, sometimes the GPS has issues finding places out here haha. As we drove Will guessed and guessed where we were going never getting even close, that was right until we were about to turned the corner to our destination, he guessed it, a pumpkin patch.  Mr. Peppers Pumpkin Patch to be exact, hehe! Because we were there in the middle of the week it was just us, and about a hundred preschoolers, but we grabbed our wheelbarrow and went in search of the best pumpkin.  Unfortunately because it was already the 20th it seemed like the patch was pretty picked over, but even though we left empty handed we still had a lot of fun! 
We tried our best to do the type of photos little kids would do, I think Will's is pretty spot on, hehe.

After our fun day out and about, we came home and made some yummy pizza had dinner with Will's parents.  Then it was time to enjoyed the wonderfully delicious carrot cake Will's mom made, and present opening including that extremely nice sweater Will is wearing (I got him that hehe) 
I think Will's birthday adventure was a succes, and I am excited to think about all the adventures we will go on next year when we are all moved into the mountain house!

Slightly Better

Well I got my car back and while the repair was still pretty expensive, it wasn't as bad as I thought it was going to be, so I guess that is a good thing.  Now hopefully I will not have to fix anything in my car for a very, very, very long time.

While I was waiting for the garage to finish up my car yesterday, I decided to do a little baking.  Sometime it helps take my mind off of things that I am worrying about, that and I love coming up with different recipes and concoctions.  And this time a created a ricotta cheese pear and peach pie.  Now I know that might not sound like the very appetizing, but it is so wonderfully yummy.  And just incase you ever want to give it a go, I shall share my recipe with you, (all I ask is if you do try it let me know what you think and if you blog about it you credit me with the recipe).
As you can see I tend to make one messy kitchen when I bake.  
Unfortunately I didn't have quite enough dough to make the criss cross, hehe.

This pie is seriously one of my favorite creations, not too sweet and paired with the butter flaky pie crust it is wonderful, if I do say so myself, hehe!

And now for the recipe.

Ricotta cheese pear and peach pie

1 cup ricotta cheese
3/4 cup of oats (I used quick oats)
1 can of pears
1/2 can of peaches
1/8 cup white sugar
1/2 brown suger (split)
2 Tbs honey
1 tbs vanilla
1 tbs cinnamon
1 tbs nutmeg

Mix the 1/2 can of peaches (mash them up first), 1/4 cup brown sugar, 1/8 cup sugar, 1 tbs vanilla, 1 tbs cinnamon, and 1 tbs nutmeg. Stir until all ingredients are mixed together.  Pour on to the pie crust, coat the bottom.

Mis the 1 cup ricotta cheese, 3/4 cup oats, 1 can of pears (mash them up first) 2 Tbs of honey, and the other 1/4 brown sugar.  Stir until all the ingredients are mixed together.  Pour on top of the peach mixture.

Preheat the over to 400 degrees.  Bake for 15 mins then lower the heat to 350 and back for 20-30 mins.

Well Blerg

My car decided to have a little bit of a fit (ok it was break down on the side of the road kind of fit) the other day and is now at the garage being worked on.  Hopefully this not an expensive visit, but I have a feeling that is just my wishful thinking.  Ugh.

I swear when it comes to money and bills I always get hit with three big things one right after another.  First it was time to pay the car insurance, and then reregister it, and now (what I don't want to believe) a large garage bill. Double ughs.

So much for keeping some of my last paycheck for savings.

Sunday Snapshot #6

Oh lordy I can't even believe I am putting this one up, it's really kind of embarrassing. This I think is back from 2004 right before I had officially decided to get a photography degree.  This is one of my very first time messing around with photoshop.  I really have no idea why I took this or what I was going for, I probably thought it was artsy or something, that and I really loved that jacket, haha! Goodness past me can sometimes be embarrassing to current me and most likely future me, hehe.

What I Wore

A couple weeks ago one of my favorite things happened, ModCloths annual 70% off sale!! Eeee! I love this sale so much because it means I can actually get a couple of the pretty dresses I had been lusting over at a price I can actually afford! So I had to pick up three wonderfully darling dress at such a steal of a price ($13!!!) Now that is something I can better afford for sure, hehe!

I absolutely adore this dress, I just wish it wasn't strapless.  I have never had any luck finding a strapless bra that actually does its job without leaving painful indents in me, haha! Any suggestions? 
My awkward stance is mainly to hide the fact I got a huge rip in my tights, le booo!

Fall is Upon Us

Our marathon of house building has ended, at least for a little bit, and we are back in Delaware.  On one hand I was very happy to stop the 12 hour work days, but on the other hand I wasn't quite ready to leave the mountain, especially with all the leaves changing colors.  

One of my favorite things about living on the east coast is getting to see the leaves go from green to bright oranges and reds.  The trees we had in our backyard in Phoenix went from green to brown, so it wasn't all the pretty to look at.  So even though we won't be around to see all the wonderful colors this year it is nice to know that this time next year we will be living up on the mountain and will get to watch each stage of the color change.

My favorite thing as a kid was to pile up all the leaves and then jump in them, I don't think I was too originally in loving this activity.

Still Hard at Work

Our two week push on the house is coming to and end very soon, and I must say I am very happy how far we have come! There is still a lot of work to be done, and I know we won't be able to come back up for a while to do it, but I can honestly say I am one happy kid.  It still looks like we are on track for being able to move in this spring, so fingers crossed!

In a way I am also happy to be done working for a little bit, because even though working with Will's family can be great it can also because extremely stressful and peoples tempers seem to flare more quickly than if you were working with a complete stranger, which does not always make for a wonderful work environment, and it doesn't help the matter when we are all living in a little cabin together while working up here. I do not handle stress well, but I am trying my best to deal with it with out working myself up too much, but it can be pretty hard for me.  So I am happy to take a break from building for a little bit. 
At this point in the game I took pictures because I was pretty darn useless helping lift those rafters, haha!
Here is my handsome fella, awaiting his next orders.
We work up the other day to the most beautiful sunrises.  There was so much fog in the air the sun made the sky look like it was on fire. 
The tower we built when we first started building two and a half years ago.  We used it to see over the trees and down into the valley, and now the house is taller than it.

Finally did it

I finally did it and got myself a twitter account @amandagoesmeep.

The name comes from these odd little hiccup/meep noises I make a couple times a day.  Anytime it happens Will makes the noise back at me and gives me a little smirk, it's pretty funny/adorable.

Sunday Snapshot #5

This is from 2006.  The wonderful Hannah and I took a day trip two hours north to Flagstaff when it was far to hot to do anything in good old Phoenix.  I believe we were hanging out and just thought 'it's hot, we should drive up north' and we did haha! I am pretty sure we even made some goofy videos for another friend who wasn't able to come with, I will have to hunt those down :)
Hannah is one of my favorite people, and when she moved to Maryland and I moved to California I thought I would only get to see her once a year if I was lucky, but now that I too live on the east coast I get to see her much more (but still not as much as I would like  do to school and work schedules, but it is better than once a year!)

Hi October!

It is officially one of my favorite months, October! I have always loved October because it has always felt like the official start to fall for me.  That, and it has Halloween, hehe.

Will and I are still hard at work on the house, sadly not moving as quickly as would like because of weather.  It has been incredibly raining the last couple of days we haven't been able to work, but hopefully the next couple of days we will get some reprieve.  But in the mean time I will continue my decent into old lady-hood by sitting next to our wood stove while  crocheting some winter hats for Will and myself (I am sure they will be making an appearance in a post in the near future).

Will took this picture yesterday, I love it so much.  That is our lovely view from our hopefully soon to be finished home on the mountain.  I can hardly wait to wake up to this every morning.
